Corzetti are a pasta format typical of the Liguria and Tuscany regions. Born during the Renaissance period, they were used by noble families to stamp their own coats of arms on pasta, to emphasize the importance of lineage.
With the hollow side you will cut a small circle of dough before placing it on the spiral side. Using a second corzetto, you will press gently on the mold so that the sheet of dough is perfectly molded, with a spiral side and another side with the decoration of your choice.
The corzetti are made with materials suitable for coming into contact with food and can be easily cleaned with a cloth and a brush, without using water.
